
Check out my strawberry topped cheesecake! Strawberries are a fruit, which makes this healthy, right? RIGHT?!
What's great about this dessert is that it was made with all organic ingredients. Look for the "Simple Truth" brand at Kroger for organic options for nearly every type of food you're looking for.
Ingredients
4 8oz pks cream cheese
4 large eggs
2-1/2 tsp vanilla extract
2 cups granulated sugar
1 tsp lemon juice
2 cups sliced fresh strawberries
Crust: 3 cups graham crackers
3 tbsp butter
Heat oven to 350°. In 9" spring form pan, mix melted butter and graham cracker crumbs. Firmly & evenly press the mixture to the bottom of the pan to form the crust. Set aside.
In a bowl, add softened cream cheese and sugar, then stir in eggs one at a time. Mix together until smooth and creamy. Stir in vanilla and lemon juice thoroughly. Pour mixture over crust in the pan and place in the oven for 60 minutes. Let cool for 15 minutes, then chill in the refrigerator overnight or for at least 4 hours. Spread strawberries or your fruit of choice decoratively on top.
