Ingredients
2 cups flour
2 tsp baking soda
1-1/2 tsp salt
1-1/2 tsp cinnamon
1 cup granulated sugar
1/2 cup pack dark brown sugar
1/4 lb (8 tbsp) unsalted butter
2 large eggs
1 tsp pure vanilla extract
1-1/2 cups steel cut oats
1-1/2 cups plump raisins
1-1/2 cups chopped walnuts (or pecans, or almonds)

Preheat oven to 360 degrees F. Lightly butter a cookie sheet and set aside. In a mixing bowl, beat room temperature butter until it is relatively creamy. With the mixer on low, add white and brown sugar. While mixture is crumbly, add eggs one at a time. Once thoroughly mixed, add vanilla extract.
Now, add dry ingredients, including cinnamon, to your wet mixture slowly and with the mixture on a low setting, careful not to over mix. Once thoroughly mixed, stir in oatmeal with a mixing spoon, then fold in raisins and nuts.
Add batter to your pan a spoonful at a time with at least 2" of space between each cookie. Place in oven for 10-13 minutes. Let cool in pan for 5 minutes before transferring them to a cooling rack.
Makes about one dozen cookies.
